Im getting some popping out of the exhaust as well, but this may be due to a lose exhaust clamp, which i will be replacing next weekend.

What ever happened with this? I am having some similar issues but for different reasons. I rebuilt my 1800 adding a Scat C25 cam. Had to switch to some Weber ICTs as my Solex carbs are a mess. The similarity I am having is the lack of idle. The engine runs great but won't idle unless I turn the speed screws in 3 or more turns. Currently at 60 idle jets, 140 mains and 160 air. My problem was there was crap clogging my idle jets and pathways. The accel pump wasn't pushing out any fuel. I got really fine wire and rooted it around and cleared all the paths and jets out. Solved the majority of my issues. I never figured out how to jet the carbs perfectly, but I have been running them since all the issues went down without touching them again. No issues. Still getting around 30mpg
