Head reconditioning question

Hi,

I am currently in the process of building a stockish 2 litre with 1800 heads and aftermarket fuel injection. My question is, when I get the heads rebuilt what should I looks for in seats, guides, valves, tolerences etc. to get maximum reliability. I have read previous articles and heard mention of metal splintered seats and the like, but I couldn't find a good explanation. I am going to keep the stock valve sizes.
