What, if any, benefit is there to switching to a Rack & Pinion instead of using the stock steering box?

If you center mount; longer tie rods = less bumpsteer
Faster box ratios and over all weight saving are possible.

Center mount, would that mean relocating everything to the center? some kind of universal joint for it out there? Any idea what the stock ratio is?

About how much weight would I save?

Beats me, I would look at sandrail/drag cars.
Those guys are always after weight.

I think the front of a bug is the last place you want to lose an weight. Now better steering (via a center mnt system) is great!
