That looks like a nice and simple way of getting the bearing In and Out........ BUT, is there any problems with the bearing coming apart while pressing it back in?

No, bit tricky to keep it straight, but not too bad, a tap with a rubber mallet on the assembly is sufficient to straigten it out.
You press on the outer race going back in... Would be best to grind a few thou out of the middle of the floor flanges . On the Jetta I used a ground down OD outer race of the old bearing to get it past teh snap ring groove, the 914 hub mounts flush and has a plate that retains the bearing OD. (like it's going to come out anyway...)
Once you get it started straight, no problem.
Tapping the housing with a hammer helps. 5/8" SS all thread helps more.
