I have a 1970 vw bug sedan, 1641 soon to be transplanted with a 1679, hopefully this spring/summer when my hours at work pick up and I can afford the remaining $300 or so in parts I need. 1641 is just a stock sp with 87 P&C's while the 1679 is a dp motor with a cw 69mm crank, and thick wall 88's. It will have dual Weber ict's on it, 009 dizzy, lightened flywheel for faster spin up and stock rockers unless I can get a definitive answer that something bigger will work better. Just a street engine for my DD is all I am after. Something a little more fun than a stocker.
My other bug is a baja that has been chopped up, had fiberglass parts added to it, lifted and lightened that I want to lower, put full size fenders on it and race the crap out of it on the local 1/8 mile circuit. I have a few motors lying around that I intend to build that are posted about at the end of Scott The Vikings incredibly long post about everything you need to know about turbo's, which led to more Questions than Answers.
So that's me and what I am about for now. I am going back to lurking now.

We understand the VW addiction all to well.
Fortunately it also keeps us off the streets at night and also gets us to work.

I think one of the biggest deltas between TOS and STF is ~everyone on the STF at least appreciates the proper application of a Sawzall.

I gather you aren't going to be splitting the case on the 1679 and it'll have a stock cam. 1.4:1 rockers will work OK, but to realize their full potential (a few more honest peak HP) you'll also need to upgrade the valvesprings. Entry-level HD singles will do; I recommend that you also fit some steel shims under them to keep them from chewing into the heads...nothing too thick is needed. They'd also need shorter pushrods and some fussing to get the rockerarm geometry correct, dunno if that'd break your budget or not.

You say it has a counterweighted crank so I'm assuming it's also 8-dowelled. I can tell you from experience that 4 dowels aren't enough with a healthy 1679, even a relatively mild one.
If you don't already have one, get a "HD" glandnut washer. Be aware that the added thickness puts the glandnut closer to the clutch disc (enough to make it rub if the flywheel's had much resurfacing). An "undercut" glandnut like the Berg GB201 solves that, plus restores the lost thread engagement caused by the thicker washer. They don't make those anymore but you may find an N.O.S. one...or you can spend ~$40 on the "forged" version.
AA is making a knockoff in China which looks good, but I have yet to use one. I see several being offered at theSamba in the $20-$25 range, I'm guessing these are the AA (or comparable).
