Does the amount of bearing crush affect the oil clearance at the bearing? Example - will an increase in main bearing crush (via line boring adjustment ) decrease oil clearance at the crank journal?

It would have to to some extent, but I have always just taken the case and bearings to the best VW familiar machine shop I can find and said " take my money", checking the results afterwards... Not a bad idea to give them the crank to polish/grind to suit at same time, all the rotating stuff if not already balanced. The results have always been good for me, YMMV.

Addendum to Newtons first law:
zero vehicles on jackstands, square gets a fresh 090 and 1911, cabby gets a blower.
EZ3.6 Vanagon after that.(mounted, needs everything finished) then Creamsicle.
